- 1/2 cup brown sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 2 1/4 cups all-purpose flour

- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ground ginger
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter, granulated sugar, and brown sugar until fluffy.
- Add the pumpkin puree and egg, mixing until combined.
- In another bowl, whisk together flour, baking powder, baking soda, and spices. Gradually add to the wet ingredients, mixing gently.
- Chill the dough for 30 minutes.
- Drop blobs of dough onto the prepared baking sheet, leaving space between them.
- Bake for 10-12 minutes, until edges are lightly golden but centers remain soft.
- Let cool for a few minutes before transferring to a rack. Decorate if desired.

Chilling the dough helps prevent spreading. Use parchment paper to keep cookies from sticking.
