Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 2 1/4 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ground ginger

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar until fluffy.
  3. Add the pumpkin puree and egg, mixing until combined.
  4. In another bowl, whisk together flour, baking powder, baking soda, and spices. Gradually add to the wet ingredients, mixing gently.
  5. Chill the dough for 30 minutes.
  6. Drop blobs of dough onto the prepared baking sheet, leaving space between them.
  7. Bake for 10-12 minutes, until edges are lightly golden but centers remain soft.
  8. Let cool for a few minutes before transferring to a rack. Decorate if desired.

Notes

Chilling the dough helps prevent spreading. Use parchment paper to keep cookies from sticking.
