Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp orange food coloring
  • 1 tbsp green food coloring
  • 1 cup pumpkin puree
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • A pinch of salt

Instructions

  1. In a large bowl, cream together the softened butter and sugar until fluffy.
  2. Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
  3. In a separate bowl, combine all-purpose flour, baking powder, and spices. Gradually add this dry mixture to the butter-sugar mixture until fully incorporated.
  4. Split the dough into two parts; mix pumpkin puree and green food coloring into one half.
  5. Roll out both doughs into rectangles on a floured surface.
  6. Layer the pumpkin dough over the plain dough and tightly roll it up.
  7. Wrap the roll in plastic wrap and chill in the fridge for about an hour.
  8. Preheat your oven to 350°F (175°C). Slice the dough into rounds and place on a baking sheet.
  9. Bake for about 10-12 minutes or until the edges are golden.
  10. Allow to cool on a baking rack before enjoying.

Notes

Chilling the dough helps maintain the cookie shape while baking. Don’t rush the chilling process.
