- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 tsp baking powder
- 2 large eggs
- 1 tsp vanilla extract
- 1 tbsp orange food coloring
- 1 tbsp green food coloring
- 1 cup pumpkin puree
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- A pinch of salt
Instructions
- In a large bowl, cream together the softened butter and sugar until fluffy.
- Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
- In a separate bowl, combine all-purpose flour, baking powder, and spices. Gradually add this dry mixture to the butter-sugar mixture until fully incorporated.
- Split the dough into two parts; mix pumpkin puree and green food coloring into one half.
- Roll out both doughs into rectangles on a floured surface.
- Layer the pumpkin dough over the plain dough and tightly roll it up.
- Wrap the roll in plastic wrap and chill in the fridge for about an hour.
- Preheat your oven to 350°F (175°C). Slice the dough into rounds and place on a baking sheet.
- Bake for about 10-12 minutes or until the edges are golden.
- Allow to cool on a baking rack before enjoying.
Notes
Chilling the dough helps maintain the cookie shape while baking. Don’t rush the chilling process.
