- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder (optional for chocolate version)
- 1 1/2 tsp baking powder
- 2 large eggs
- 1/2 cup melted butter
- 1/2 cup milk
- 1 tsp vanilla extract (optional)
- Food coloring (various colors)
- Sprinkles, edible eyes, and candies for decoration
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix the dry ingredients: flour, sugar, cocoa powder, and baking powder.
- In another bowl, whisk together the wet ingredients: eggs, melted butter, and milk until smooth.
- Combine wet and dry mixtures until just mixed; add vanilla extract if desired.
- Fill muffin cups about two-thirds full and bake for 18-20 minutes, or until a toothpick comes out clean.
- Cool completely before frosting and decorating into monster cupcakes.
- Frost with your choice and decorate with colored icing, candy eyes, and other fun toppings.
Notes
For gluten-free cupcakes, use gluten-free flour. Applesauce can be substituted for eggs for a vegan option.
