- 1 cup granulated sugar
- ½ cup unsalted butter, softened
- 2 large eggs
- 1 ½ tsp baking powder
- ½ cup milk
- 1 tsp vanilla extract
- 3 large egg whites
- 1 cup granulated sugar (for meringue)
- ½ tsp cream of tartar
- 1 tsp lemon juice or vanilla extract (for meringue)
- Chocolate chips (for decoration)
Instructions
- Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- Whisk together the flour and baking powder in one bowl.
- Cream the butter and sugar until light and fluffy in another bowl.
- Incorporate eggs one at a time, mixing well after each addition.
- Add milk and vanilla, then gradually mix in dry ingredients until just combined.
- Divide the batter among cupcake liners, filling two-thirds full.
- Bake for 18-20 minutes, or until a toothpick comes out clean. Cool completely before frosting.
- Prepare meringue by beating egg whites with cream of tartar until soft peaks form. Gradually add sugar until glossy and stiff peaks form; add lemon juice.
- Pip the meringue onto the cooled cupcakes to shape into ghosts.
- Bake decorated cupcakes in a low oven (200°F/95°C) for 1 hour.
- Finish with chocolate chips for eyes.
Notes
Make sure the butter is at room temperature for easy creaming. Use clean, dry equipment when whipping egg whites for best results.
