  • 2 large eggs

  • 1 cup granulated sugar (for meringue)
  • ½ tsp cream of tartar
  • 1 tsp lemon juice or vanilla extract (for meringue)
  • Chocolate chips (for decoration)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. Whisk together the flour and baking powder in one bowl.
  3. Cream the butter and sugar until light and fluffy in another bowl.
  4. Incorporate eggs one at a time, mixing well after each addition.
  5. Add milk and vanilla, then gradually mix in dry ingredients until just combined.
  6. Divide the batter among cupcake liners, filling two-thirds full.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean. Cool completely before frosting.
  8. Prepare meringue by beating egg whites with cream of tartar until soft peaks form. Gradually add sugar until glossy and stiff peaks form; add lemon juice.
  9. Pip the meringue onto the cooled cupcakes to shape into ghosts.
  10. Bake decorated cupcakes in a low oven (200°F/95°C) for 1 hour.
  11. Finish with chocolate chips for eyes.

Notes

Make sure the butter is at room temperature for easy creaming. Use clean, dry equipment when whipping egg whites for best results.
