- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ¾ teaspoons baking powder
- ½ cup milk
- A pinch of salt
- For the Buttercream Frosting:
- 1 cup unsalted butter, softened
- 3–4 cups powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons milk
- A few drops of red food coloring
- A little almond extract (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake tin with liners.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large mixing bowl, cream butter and sugar until light and fluffy, about 3-5 minutes.
- Beat in eggs one at a time, followed by vanilla extract.
- Gradually add dry ingredients, alternating with milk, mixing until smooth.
- Scoop batter into liners, filling two-thirds full.
- Bake for 18-20 minutes or until a toothpick comes out clean; let cool.
- For frosting, beat butter until creamy, gradually add powdered sugar, then mix in milk, vanilla, and optional ingredients.
- Pipe frosting onto cupcakes to create a brain effect.
- Optionally decorate with edible glitter or gummy worms.
Notes
Store cupcakes in an airtight container for up to three days or refrigerate for longer storage. They can be frozen for up to three months.
