- 1 pound ground beef
- 4 medium-sized potatoes, peeled and diced
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 cup beef broth
- 1 teaspoon dried thyme (or your herb of choice)
- Salt and pepper to taste
- Olive oil for sautéing
- Optional: shredded cheese for topping
Instructions
- In a large skillet or sauté pan, heat a splash of olive oil over medium heat. Add the chopped onion and garlic. Sauté until the onions are translucent and fragrant, about 5 minutes.
- Push the onions to one side of the pan and add the ground beef. Break it apart using a spatula and allow it to brown, seasoning with salt, pepper, and herbs.
- Once the beef is browned, stir in the diced potatoes. Pour the beef broth over the mixture and bring to a gentle simmer. Cover and reduce heat to low.
- Cook for about 20-25 minutes, or until the potatoes are fork-tender and the liquid has thickened slightly. Stir occasionally to prevent sticking.
- If using cheese, sprinkle it on top and cover for a few minutes to let it melt. Serve hot and enjoy!
Notes
Brown the beef properly for enhanced flavor and avoid adding too much liquid at the start to maintain a thick consistency.
