Ingredients

  • 1 pound ground beef
  • 4 medium-sized potatoes, peeled and diced
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup beef broth
  • 1 teaspoon dried thyme (or your herb of choice)
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Optional: shredded cheese for topping

Instructions

  1. In a large skillet or sauté pan, heat a splash of olive oil over medium heat. Add the chopped onion and garlic. Sauté until the onions are translucent and fragrant, about 5 minutes.
  2. Push the onions to one side of the pan and add the ground beef. Break it apart using a spatula and allow it to brown, seasoning with salt, pepper, and herbs.
  3. Once the beef is browned, stir in the diced potatoes. Pour the beef broth over the mixture and bring to a gentle simmer. Cover and reduce heat to low.
  4. Cook for about 20-25 minutes, or until the potatoes are fork-tender and the liquid has thickened slightly. Stir occasionally to prevent sticking.
  5. If using cheese, sprinkle it on top and cover for a few minutes to let it melt. Serve hot and enjoy!

Notes

Brown the beef properly for enhanced flavor and avoid adding too much liquid at the start to maintain a thick consistency.
