  • Dairy or non-dairy milk
  • Fresh dill
  • Thyme
  • Garlic powder
  • Salt
  • Pepper

Instructions

  1. In a large pot over medium-high heat, add olive oil and sauté chopped onions until translucent.
  2. Add diced carrots and celery, cooking for about 5 minutes.
  3. Introduce chicken to the pot, searing for 4-5 minutes on each side, then season with salt, pepper, thyme, and rosemary.
  4. Pour in chicken broth, bring to a gentle simmer.
  5. Add sliced mushrooms to the pot.
  6. In a separate bowl, whisk together gluten-free flour, baking powder, salt, and garlic powder. Stir in milk until a thick batter forms.
  7. Once chicken is cooked, shred it and return to the pot. Drop spoonfuls of dumpling batter over the broth, cover, and steam for 15-20 minutes.
