- 1 lb Chicken Thighs (or Chicken Breasts)
- 1 cup Wild Rice
- 2 Yellow Onions, sliced
- 8 oz Cremini or Shiitake Mushrooms, sliced
- 2 cups Chicken Broth
- 1 tbsp Fresh Thyme (or dried)
- 2 cloves Garlic, minced
- 2 tbsp Butter
- Salt and Pepper to taste
Instructions
- Melt butter in a large skillet over medium heat. Add sliced onions with a pinch of salt and sauté until caramelized, about 15-20 minutes.
- Add sliced mushrooms and minced garlic to the skillet. Cook until mushrooms soften and are fragrant.
- Push the onion and mushroom mixture to one side. Add chicken thighs, seasoning with salt, pepper, and thyme. Sear until golden brown, then flip to cook the other side.
- Pour in chicken broth and bring to a gentle simmer. Cook until chicken reaches an internal temperature of 165°F.
- Prepare the wild rice according to package instructions. Fluff and stir it into the skillet with the chicken and veggies.
- Top with additional herbs and serve hot. Garnish with grated cheese if desired.
Notes
Best served warm, topped with freshly chopped parsley or thyme. Pairs wonderfully with a crisp side salad.
