Ingredients

  • 1 lb Chicken Thighs (or Chicken Breasts)
  • 1 cup Wild Rice
  • 2 Yellow Onions, sliced
  • 8 oz Cremini or Shiitake Mushrooms, sliced
  • 2 cups Chicken Broth
  • 1 tbsp Fresh Thyme (or dried)
  • 2 cloves Garlic, minced
  • 2 tbsp Butter
  • Salt and Pepper to taste

Instructions

  1. Melt butter in a large skillet over medium heat. Add sliced onions with a pinch of salt and sauté until caramelized, about 15-20 minutes.
  2. Add sliced mushrooms and minced garlic to the skillet. Cook until mushrooms soften and are fragrant.
  3. Push the onion and mushroom mixture to one side. Add chicken thighs, seasoning with salt, pepper, and thyme. Sear until golden brown, then flip to cook the other side.
  4. Pour in chicken broth and bring to a gentle simmer. Cook until chicken reaches an internal temperature of 165°F.
  5. Prepare the wild rice according to package instructions. Fluff and stir it into the skillet with the chicken and veggies.
  6. Top with additional herbs and serve hot. Garnish with grated cheese if desired.

Notes

Best served warm, topped with freshly chopped parsley or thyme. Pairs wonderfully with a crisp side salad.
