Instructions

  1. Marinate the chicken by whisking together mustard, paprika, minced garlic, salt, and pepper in a bowl. Coat the chicken thighs and let marinate for at least 30 minutes in the refrigerator.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken thighs, skin side down, avoiding overcrowding.
  3. Sear the chicken for 5-7 minutes until the skin is golden brown. Flip and reduce heat to medium, cooking for another 10-15 minutes until internal temperature reaches 165°F (75°C).
  4. Optional: Baste the chicken with pan juices during the last few minutes.
  5. Remove chicken from skillet and let rest for 5 minutes before serving.
