Tender chicken skewers marinated in a mix of ranch, garlic, and Parmesan, grilled to golden perfection.
Ingredients

- 2 pounds boneless, skinless chicken thighs (or breasts)
- 1 cup ranch dressing
- 1/2 cup freshly grated Parmesan cheese
- 2 cloves minced garlic
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
- Wooden skewers ( soaked for 30 minutes if grilling)
- Optional add-ins: smoked paprika, chopped fresh herbs, honey
Instructions
- Cut the chicken into uniform 1–1½-inch cubes and season lightly with salt and pepper.
- In a bowl, whisk together ranch dressing, minced garlic, grated Parmesan, olive oil, and lemon juice.
- Toss the chicken in the marinade until well coated, cover, and let marinate for at least 30 minutes or up to 4 hours.
- Soak wooden skewers for 30 minutes if grilling. Thread chicken pieces onto skewers, leaving space between pieces.
- Preheat the grill to medium-high. Oil the grates and grill skewers for 3–4 minutes per side until charred and cooked through.
- Serve immediately, brushing with extra ranch-Parmesan mix or melted butter, and garnish with additional Parmesan and herbs.
Notes
Let the meat rest for 5 minutes after cooking for juiciness. Use an instant-read thermometer to check for doneness (165°F/74°C).
