Easy and Delicious Ranch Garlic Parmesan Chicken Skewers

Description

Tender chicken skewers marinated in a mix of ranch, garlic, and Parmesan, grilled to golden perfection.


Ingredients

  • 2 pounds boneless, skinless chicken thighs (or breasts)
  • 1 cup ranch dressing
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cloves minced garlic
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Wooden skewers ( soaked for 30 minutes if grilling)
  • Optional add-ins: smoked paprika, chopped fresh herbs, honey

Instructions

  1. Cut the chicken into uniform 1–1½-inch cubes and season lightly with salt and pepper.
  2. In a bowl, whisk together ranch dressing, minced garlic, grated Parmesan, olive oil, and lemon juice.
  3. Toss the chicken in the marinade until well coated, cover, and let marinate for at least 30 minutes or up to 4 hours.
  4. Soak wooden skewers for 30 minutes if grilling. Thread chicken pieces onto skewers, leaving space between pieces.
  5. Preheat the grill to medium-high. Oil the grates and grill skewers for 3–4 minutes per side until charred and cooked through.
  6. Serve immediately, brushing with extra ranch-Parmesan mix or melted butter, and garnish with additional Parmesan and herbs.

Notes

Let the meat rest for 5 minutes after cooking for juiciness. Use an instant-read thermometer to check for doneness (165°F/74°C).
