- 4 boneless, skinless chicken breasts or thighs
- 1 can of green chiles (mild or hot)
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil or butter
- 1/4 cup chicken broth or white wine
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- Salt and pepper to taste
- Fresh cilantro or parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the chicken dry and season with salt, pepper, smoked paprika, and a pinch of cumin.
- Heat a skillet over medium-high heat, add olive oil or butter, and sear each side of the chicken for 2-3 minutes until golden.
- Remove chicken and lower heat; add another tablespoon of butter and sauté onions until translucent. Add garlic and optional mushrooms, cooking until fragrant.
- Deglaze the pan with broth/wine, scrape up browned bits, then stir in green chiles and cheese until melting.
- Nestle chicken back into the skillet, spoon chile-cheese mixture over, and add a light layer of extra cheese on top.
- Bake in oven for 10-12 minutes until chicken reaches 165°F and cheese is bubbling and browned.
- Let rest for 5 minutes and garnish with fresh herbs. Serve with lime wedges.
Notes
For extra creaminess, consider adding sour cream or cream cheese to the sauce. Adjust chiles for spice level.
