Description

A comforting one-pan dish of tender chicken baked with smoky green chiles and creamy melted cheese, perfect for family dinners.


Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1 can of green chiles (mild or hot)
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil or butter
  • 1/4 cup chicken broth or white wine
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken dry and season with salt, pepper, smoked paprika, and a pinch of cumin.
  3. Heat a skillet over medium-high heat, add olive oil or butter, and sear each side of the chicken for 2-3 minutes until golden.
  4. Remove chicken and lower heat; add another tablespoon of butter and sauté onions until translucent. Add garlic and optional mushrooms, cooking until fragrant.
  5. Deglaze the pan with broth/wine, scrape up browned bits, then stir in green chiles and cheese until melting.
  6. Nestle chicken back into the skillet, spoon chile-cheese mixture over, and add a light layer of extra cheese on top.
  7. Bake in oven for 10-12 minutes until chicken reaches 165°F and cheese is bubbling and browned.
  8. Let rest for 5 minutes and garnish with fresh herbs. Serve with lime wedges.

Notes

For extra creaminess, consider adding sour cream or cream cheese to the sauce. Adjust chiles for spice level.
