- 1 1/2 pounds ground beef (85/15)
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced (optional)
- 1 teaspoon Worcestershire sauce
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1/2 cup sour cream or plain Greek yogurt
- 2 cups shredded sharp cheddar cheese
- 1 (32 oz) bag frozen tator tots
- Salt to taste
- Black pepper to taste
- Smoked paprika to taste
- Dried oregano or thyme to taste
- Fresh parsley or chives for garnish
Instructions
- Preheat your oven to 400°F (200°C) and grease a 9×13-inch baking dish.
- In a large skillet over medium-high heat, add a tablespoon of oil and sauté the onion for about 4 minutes until translucent.
- Season the ground beef with salt, pepper, and smoked paprika and add to the skillet, browning for 6-8 minutes.
- If needed, drain excess fat but leave a tablespoon for flavor.
- Add the minced garlic and sliced mushrooms, sauté for another 3-4 minutes until the mushrooms start to brown.
- Stir in Worcestershire sauce and let it reduce for a minute. Lower the heat, then fold in the mushroom soup and sour cream, adjusting consistency with milk if necessary.
- Stir in 1 1/2 cups of cheddar cheese until melted and gooey. Transfer the mixture to the baking dish.
- Arrange the tator tots in a single layer on top and sprinkle with remaining cheese.
- Bake uncovered for 25-30 minutes until the tator tots are golden and filling is bubbling. Broil for 2-3 minutes for extra crispness if desired.
- Let rest for 5 minutes, garnish with parsley or chives, and serve hot.
Notes
Substitute lean beef or plant-based crumbles for healthier options. Add extra vegetables or herbs based on preference.
