Description

A comforting casserole that combines savory ground beef, creamy cheese, and crispy tator tots for a family-favorite meal.


Ingredients

  • 1 1/2 pounds ground beef (85/15)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced (optional)
  • 1 teaspoon Worcestershire sauce
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1/2 cup sour cream or plain Greek yogurt
  • 2 cups shredded sharp cheddar cheese
  • 1 (32 oz) bag frozen tator tots
  • Salt to taste
  • Black pepper to taste
  • Smoked paprika to taste
  • Dried oregano or thyme to taste
  • Fresh parsley or chives for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a 9×13-inch baking dish.
  2. In a large skillet over medium-high heat, add a tablespoon of oil and sauté the onion for about 4 minutes until translucent.
  3. Season the ground beef with salt, pepper, and smoked paprika and add to the skillet, browning for 6-8 minutes.
  4. If needed, drain excess fat but leave a tablespoon for flavor.
  5. Add the minced garlic and sliced mushrooms, sauté for another 3-4 minutes until the mushrooms start to brown.
  6. Stir in Worcestershire sauce and let it reduce for a minute. Lower the heat, then fold in the mushroom soup and sour cream, adjusting consistency with milk if necessary.
  7. Stir in 1 1/2 cups of cheddar cheese until melted and gooey. Transfer the mixture to the baking dish.
  8. Arrange the tator tots in a single layer on top and sprinkle with remaining cheese.
  9. Bake uncovered for 25-30 minutes until the tator tots are golden and filling is bubbling. Broil for 2-3 minutes for extra crispness if desired.
  10. Let rest for 5 minutes, garnish with parsley or chives, and serve hot.

Notes

Substitute lean beef or plant-based crumbles for healthier options. Add extra vegetables or herbs based on preference.
