Ingredients

- 2–3 pounds chuck roast
- 2 tablespoons Italian seasoning
- 4 cloves garlic, minced
- 1 cup pepperoncini
- 2 cups beef broth
- 1 onion, sliced
- 1 bell pepper, sliced
- Salt and pepper to taste
Instructions
- Pat the beef roast dry and season liberally with salt and pepper.
- Heat a skillet over medium-high heat and sear the beef on all sides (optional).
- Layer sliced onions, bell peppers, and minced garlic in the crock pot.
- Place the roast on top and pour in the beef broth until nearly covered.
- Sprinkle with Italian seasoning and add pepperoncini.
- Set the crock pot to low for 8 hours or high for 4 hours.
- Once tender, shred the beef using two forks and mix with the sauce.
Notes
Serve on toasted hoagie rolls or over mashed potatoes, rice, or zucchini noodles.
