Description

A comforting and flavorful Italian-American dish made effortlessly in a crock pot.


Ingredients

  • 23 pounds chuck roast
  • 2 tablespoons Italian seasoning
  • 4 cloves garlic, minced
  • 1 cup pepperoncini
  • 2 cups beef broth
  • 1 onion, sliced
  • 1 bell pepper, sliced
  • Salt and pepper to taste

Instructions

  1. Pat the beef roast dry and season liberally with salt and pepper.
  2. Heat a skillet over medium-high heat and sear the beef on all sides (optional).
  3. Layer sliced onions, bell peppers, and minced garlic in the crock pot.
  4. Place the roast on top and pour in the beef broth until nearly covered.
  5. Sprinkle with Italian seasoning and add pepperoncini.
  6. Set the crock pot to low for 8 hours or high for 4 hours.
  7. Once tender, shred the beef using two forks and mix with the sauce.

Notes

Serve on toasted hoagie rolls or over mashed potatoes, rice, or zucchini noodles.
