Instructions
- Heat a heavy-bottomed pot over medium heat, and add olive oil or butter.
- Add the chopped onion and a pinch of salt; sauté until translucent and golden.
- Add minced garlic and cook until fragrant.
- Stir in the tomatoes, smoked paprika, and let the mixture simmer.
- Pour in the broth and bring to a gentle simmer.
- Use an immersion blender to purée until silky smooth.
- Stir in the heavy cream and adjust seasoning.
- Garnish with basil leaves and serve immediately.
