Ingredients

  • 1 large yellow onion, finely chopped
  • 34 cloves garlic, minced
  • 2 pounds ripe tomatoes, chopped, or 28 oz canned whole tomatoes
  • 2 cups vegetable or chicken broth
  • 1/2 cup heavy cream or full-fat coconut milk
  • 2 teaspoons sugar or honey
  • 1 teaspoon smoked paprika or sweet paprika
  • Salt and freshly ground black pepper to taste
  • Fresh basil leaves for garnish
  • Optional: roasted mushrooms or balsamic vinegar

Instructions

  1. Heat a heavy-bottomed pot over medium heat, and add olive oil or butter.
  2. Add the chopped onion and a pinch of salt; sauté until translucent and golden.
  3. Add minced garlic and cook until fragrant.
  4. Stir in the tomatoes, smoked paprika, and let the mixture simmer.
  5. Pour in the broth and bring to a gentle simmer.
  6. Use an immersion blender to purée until silky smooth.
  7. Stir in the heavy cream and adjust seasoning.
  8. Garnish with basil leaves and serve immediately.

Notes

Always taste as you go; tomato sweetness and acidity can vary. You can use canned tomatoes when fresh ones are not available.
