Easy Creamy Roasted Cauliflower White Bean Soup

Description

A comforting and creamy soup featuring roasted cauliflower and white beans, perfect for cold weather and gatherings.


Ingredients

  • 1 large head cauliflower, chopped into florets
  • 23 tablespoons olive oil
  • Salt and pepper to taste
  • 1 large onion, cut into wedges
  • 1 large carrot, diced
  • 1 celery stalk, diced
  • 4 garlic cloves, minced
  • 2 (15-ounce) cans white beans, drained
  • 4 cups vegetable or chicken stock
  • 2 teaspoons fresh thyme leaves
  • 1/4 cup cream, whole milk, or coconut milk (optional)
  • Squeeze of lemon juice for serving
  • Fresh herbs for garnish, optional
  • Toasted breadcrumbs for garnish, optional

Instructions

  1. Preheat the oven to 425°F (220°C). Trim and chop the cauliflower into medium florets and cut the onion into wedges.
  2. Toss the cauliflower and onion with olive oil, salt, pepper, and thyme. Spread on a baking sheet and roast for 25–30 minutes, stirring once halfway through.
  3. In a large soup pot, warm olive oil over medium heat. Add carrot and celery, sauté until softened, about 5 minutes. Stir in garlic and cook for another minute.
  4. Add the drained white beans and stock to the pot. Scrape browned bits from the roasting pan into the pot. Add roasted cauliflower and onions, simmer for 10–15 minutes.
  5. Blend the soup using an immersion blender until creamy; for extra silkiness, stir in cream or coconut milk. Adjust seasoning with salt, pepper, and lemon juice.
  6. Ladle into bowls, garnish with olive oil, herbs, or toasted breadcrumbs, and serve warm.

Notes

For a thicker texture, reserve some beans before blending and stir back in. For a smoky note, roast garlic with the cauliflower.
