A comforting and creamy soup featuring roasted cauliflower and white beans, perfect for cold weather and gatherings.

- 1 large head cauliflower, chopped into florets
- 2–3 tablespoons olive oil
- Salt and pepper to taste
- 1 large onion, cut into wedges
- 1 large carrot, diced
- 1 celery stalk, diced
- 4 garlic cloves, minced
- 2 (15-ounce) cans white beans, drained
- 4 cups vegetable or chicken stock
- 2 teaspoons fresh thyme leaves
- 1/4 cup cream, whole milk, or coconut milk (optional)
- Squeeze of lemon juice for serving
- Fresh herbs for garnish, optional
- Toasted breadcrumbs for garnish, optional
Instructions
- Preheat the oven to 425°F (220°C). Trim and chop the cauliflower into medium florets and cut the onion into wedges.
- Toss the cauliflower and onion with olive oil, salt, pepper, and thyme. Spread on a baking sheet and roast for 25–30 minutes, stirring once halfway through.
- In a large soup pot, warm olive oil over medium heat. Add carrot and celery, sauté until softened, about 5 minutes. Stir in garlic and cook for another minute.
- Add the drained white beans and stock to the pot. Scrape browned bits from the roasting pan into the pot. Add roasted cauliflower and onions, simmer for 10–15 minutes.
- Blend the soup using an immersion blender until creamy; for extra silkiness, stir in cream or coconut milk. Adjust seasoning with salt, pepper, and lemon juice.
- Ladle into bowls, garnish with olive oil, herbs, or toasted breadcrumbs, and serve warm.
Notes
For a thicker texture, reserve some beans before blending and stir back in. For a smoky note, roast garlic with the cauliflower.
