These Easy Cranberry Brie Bites with Puff Pastry are the perfect appetizer—flaky, buttery, and filled with creamy brie, tangy cranberry sauce, and a touch of sweetness. Ideal for holidays or cozy gatherings, they come together in just minutes and disappear even faster.
Ingredients
1 sheet puff pastry, thawed
4 oz brie cheese, cut into small pieces
1/2 cup cranberry sauce (store-bought or homemade)
1 tablespoon honey (optional)
1 egg (for egg wash)
1 tablespoon water (for egg wash)
Fresh rosemary or thyme, chopped (optional garnish)
Optional: chopped walnuts or pecans
Instructions
1. Preheat your oven to 375°F (190°C).
2. On a lightly floured surface, roll out the puff pastry to about 1/8-inch thickness.
3. Cut the pastry into 12 squares and place each into a mini muffin tin cup.
4. Add a piece of brie to the center of each square.
5. Top with a small spoonful of cranberry sauce and a drizzle of honey, if desired.
6. Fold the corners slightly or leave them open for a rustic look.
7. In a small bowl, whisk the egg and water to make an egg wash.
8. Brush the tops of the pastry with the egg wash.
9. Bake for 15–20 minutes until puffed and golden brown.
10. Let cool slightly before garnishing with herbs and serving.
Notes
Use frozen puff pastry and let it thaw overnight in the fridge for best texture.
Brie rind can be left on or trimmed, based on preference.
Add a few chopped nuts for added texture and flavor.
These bites are best served warm but can be reheated.
