- 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 package traditional stuffing mix or cornbread stuffing
- 1 can cream of mushroom or cream of chicken soup
- 1 cup chicken broth
- 1/2 cup diced onions
- 1/2 cup diced celery
- 1/2 cup diced carrots (optional)
- Fresh or dried herbs (thyme, rosemary, or parsley)
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, sauté the diced chicken until golden brown and cooked through. Season with salt and pepper.
- In a large bowl, combine the stuffing mix and chicken broth, letting it absorb the liquid.
- Stir the cream soup into the chicken mixture.
- In a greased 9×13-inch baking dish, layer the chicken mixture followed by the stuffing mixture.
- Cover with foil and bake for 30 minutes, then remove foil and bake for an additional 15-20 minutes until golden brown.
- Let it rest for a few minutes before serving.
