Scale
  • 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 package traditional stuffing mix or cornbread stuffing
  • 1 can cream of mushroom or cream of chicken soup
  • 1 cup chicken broth
  • 1/2 cup diced onions

  • 1/2 cup diced carrots (optional)
  • Fresh or dried herbs (thyme, rosemary, or parsley)

  2. In a skillet over medium heat, sauté the diced chicken until golden brown and cooked through. Season with salt and pepper.
  3. In a large bowl, combine the stuffing mix and chicken broth, letting it absorb the liquid.

  5. In a greased 9×13-inch baking dish, layer the chicken mixture followed by the stuffing mixture.
  6. Cover with foil and bake for 30 minutes, then remove foil and bake for an additional 15-20 minutes until golden brown.
