Ingredients

- 1 pound boneless, skinless chicken thighs or breasts
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 zucchini or 1 cup corn (optional)
- 4 cups chicken broth
- Juice of 2 limes
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
- Olive oil for sautéing
- Smoked paprika (optional)
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Add chopped onions and bell peppers, sautéing until softened, about 5 minutes.
- Add minced garlic and cook for another minute.
- Season diced chicken with salt and pepper, then add to the pot. Cook until it’s no longer pink, about 5-7 minutes.
- Add chicken broth and bring to a simmer. If using any additional veggies, toss them in now.
- Stir in lime juice, chopped cilantro, and any spices you enjoy. Let it simmer for an additional 10 minutes.
- Taste and adjust seasonings, adding more lime juice or herbs as desired. Ladle into bowls and garnish each serving with extra cilantro and a lime wedge.
Notes
For deeper flavor, allow the soup to sit off the heat for 30 minutes before serving.
