Ingredients

  • 1 pound boneless, skinless chicken thighs or breasts
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 zucchini or 1 cup corn (optional)
  • 4 cups chicken broth
  • Juice of 2 limes
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Smoked paprika (optional)

Instructions

  1. In a large pot, heat a drizzle of olive oil over medium heat. Add chopped onions and bell peppers, sautéing until softened, about 5 minutes.
  2. Add minced garlic and cook for another minute.
  3. Season diced chicken with salt and pepper, then add to the pot. Cook until it’s no longer pink, about 5-7 minutes.
  4. Add chicken broth and bring to a simmer. If using any additional veggies, toss them in now.
  5. Stir in lime juice, chopped cilantro, and any spices you enjoy. Let it simmer for an additional 10 minutes.
  6. Taste and adjust seasonings, adding more lime juice or herbs as desired. Ladle into bowls and garnish each serving with extra cilantro and a lime wedge.

Notes

For deeper flavor, allow the soup to sit off the heat for 30 minutes before serving.
