Ingredients

  • 32 ounces full-fat cream cheese, room temperature

  • 1 cup sour cream or full-fat Greek yogurt
  • 2 tablespoons espresso or very strong brewed coffee
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar (for caramel)
  • 6 tablespoons unsalted butter (for caramel)
  • 1/2 cup heavy cream, warm (for caramel)
  • 1 teaspoon flaky sea salt (for caramel)

Instructions

  1. Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan, lining the bottom with parchment.
  2. For the crust, combine graham cracker crumbs, melted butter, and brown sugar in a bowl, then press firmly into the bottom of the pan and bake for 8–10 minutes, then cool.
  3. For the filling, beat the cream cheese until smooth, add sugar, then incorporate eggs one at a time. Fold in sour cream, espresso, and vanilla until silky.
  4. Pour the filling over the cooled crust, smoothing the top. Bake in a water bath for 50–60 minutes until the center jiggles slightly.
  5. Turn off the oven and let the cheesecake rest inside for an hour.
  6. For the salted caramel, heat 1 cup sugar over medium heat until melted. Add butter and whisk, then slowly pour in warm cream and whisk in sea salt. Let cool.
  7. Refrigerate the cheesecake uncovered for at least 6 hours or overnight, then drizzle with salted caramel and sprinkle with flaky salt before serving.

Notes

Avoid over-whipping the batter to prevent cracks, and always use room-temperature ingredients for a smooth blend.
