  • 1 cup bread crumbs (panko for extra crunch)

  • 2 tbsp lemon juice
  • Salt and pepper to taste
  • 1 tsp garlic (fresh or powdered)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Remove skin and bones from fresh salmon, chop into small pieces, or drain canned salmon thoroughly.
  3. In a mixing bowl, combine salmon, bread crumbs, chopped herbs, beaten egg, lemon juice, salt, pepper, and garlic. Mix until combined.
  4. Form mixture into patties, aim for about 3-4 inches in diameter.
  5. Place patties on the prepared baking sheet and brush tops lightly with oil.
