- 1 lb fresh salmon fillets (or 1 can canned salmon)
- 1 cup bread crumbs (panko for extra crunch)
- 1/4 cup fresh herbs (dill, parsley, or chives)
- 1 large egg
- 2 tbsp lemon juice
- Salt and pepper to taste
- 1 tsp garlic (fresh or powdered)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Remove skin and bones from fresh salmon, chop into small pieces, or drain canned salmon thoroughly.
- In a mixing bowl, combine salmon, bread crumbs, chopped herbs, beaten egg, lemon juice, salt, pepper, and garlic. Mix until combined.
- Form mixture into patties, aim for about 3-4 inches in diameter.
- Place patties on the prepared baking sheet and brush tops lightly with oil.
- Bake for 20-25 minutes or until golden brown and firm, flipping halfway through.
- Let cool slightly before serving.
Notes
For extra crispiness, consider broiling the patties for the last few minutes of baking.
