Ingredients

- 2 cups dried navy beans (or 4 cans of navy beans)
- 4 strips bacon (or diced mushrooms for vegetarian option)
- 1 onion, diced
- 3 cloves garlic, minced
- 1/2 cup molasses
- 1/2 cup ketchup
- 2 tablespoons mustard
- 1/4 cup brown sugar
- 4 cups water or broth
Instructions
- Soak your beans overnight in water. If short on time, boil beans for 2 minutes and let them sit for 1 hour.
- Cook the bacon in a large pot over medium heat until crispy. Remove and set aside, keeping drippings in the pot.
- Sauté the onions and garlic in the drippings for about 5 minutes until softened.
- Combine the soaked beans, crumbled bacon or alternative, molasses, ketchup, mustard, brown sugar, and enough water or broth to cover beans.
- Simmer the mixture on low heat for 1.5 to 2 hours, stirring occasionally, until beans are tender and sauce thickens.
- Taste and season with salt and pepper as needed.
- Let the dish cool; flavors deepen if refrigerated overnight.
Notes
Baked beans can be enhanced with additional spices or hot sauce for a kick.
