Ingredients

  • 2 cups dried navy beans (or 4 cans of navy beans)
  • 4 strips bacon (or diced mushrooms for vegetarian option)
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup molasses
  • 1/2 cup ketchup
  • 2 tablespoons mustard
  • 1/4 cup brown sugar
  • 4 cups water or broth

Instructions

  1. Soak your beans overnight in water. If short on time, boil beans for 2 minutes and let them sit for 1 hour.
  2. Cook the bacon in a large pot over medium heat until crispy. Remove and set aside, keeping drippings in the pot.
  3. Sauté the onions and garlic in the drippings for about 5 minutes until softened.
  4. Combine the soaked beans, crumbled bacon or alternative, molasses, ketchup, mustard, brown sugar, and enough water or broth to cover beans.
  5. Simmer the mixture on low heat for 1.5 to 2 hours, stirring occasionally, until beans are tender and sauce thickens.
  6. Taste and season with salt and pepper as needed.
  7. Let the dish cool; flavors deepen if refrigerated overnight.
