- 2 cups dried navy or pinto beans (or 4 cups canned beans)
- 1/2 cup molasses (or maple syrup/brown sugar)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 tablespoons mustard (yellow or Dijon)
- 1 cup tomato sauce or ketchup
- 1 teaspoon smoked paprika (optional)
- Salt and pepper to taste
Instructions
- Soak the beans overnight in water to soften them. If short on time, use canned beans, drain and rinse well.
- Sauté diced onions in a skillet over medium heat until translucent, then add minced garlic and cook for another minute.
- Mix together the soaked (or canned) beans, caramelized onions, garlic, tomato sauce, molasses, mustard, and spices in a large bowl.
- Bake the mixture in a baking dish, covered with foil, at 325°F (165°C) for about 45-60 minutes, or until the beans are tender.
- Remove the foil during the last 15 minutes of baking to allow for caramelization on top.
Notes
For added flavor, consider incorporating smoked paprika or chili powder. Stir occasionally during baking to retain moisture.
