Ingredients

- 1 medium sweet potato
- 1 ripe avocado
- 2 eggs
- Salt to taste
- Pepper to taste
- Olive oil (optional)
- Red pepper flakes (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the sweet potato into 1/2-inch thick rounds. Place them on a baking sheet and drizzle with olive oil, salt, and pepper.
- Bake in the oven for about 20 minutes or until tender.
- Prepare the eggs: poach, scramble, or fry them to your liking.
- Mash the avocado in a bowl and season with salt and pepper.
- Spread the mashed avocado on top of each sweet potato slice once they are done.
- Top with the cooked egg and add red pepper flakes if desired.
- Serve immediately and enjoy your healthy toast!

Best enjoyed fresh but can be stored separately for up to three days.
