Ingredients

  • 1 ripe avocado
  • 2 eggs
  • Salt to taste
  • Pepper to taste
  • Olive oil (optional)
  • Red pepper flakes (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the sweet potato into 1/2-inch thick rounds. Place them on a baking sheet and drizzle with olive oil, salt, and pepper.
  3. Bake in the oven for about 20 minutes or until tender.
  4. Prepare the eggs: poach, scramble, or fry them to your liking.
  5. Mash the avocado in a bowl and season with salt and pepper.
  6. Spread the mashed avocado on top of each sweet potato slice once they are done.
  7. Top with the cooked egg and add red pepper flakes if desired.
