Instructions
- Preheat the oven to 350°F (175°C) and line a muffin pan with paper liners.
- In a skillet, melt 1 tbsp of butter over medium heat, add diced apples, cinnamon, and brown sugar. Sauté for 5-7 minutes and let cool.
- Cream together softened butter and sugars until light and fluffy. Add eggs one at a time, mixing well. Then, add milk and vanilla extract.
- Whisk together flour, baking powder, baking soda, salt, and cinnamon. Gradually combine with wet ingredients, mixing until just combined.
- Divide half of the batter into muffin cups, add sautéed apple filling, and top with remaining batter.
- Bake for 18-20 minutes, or until a toothpick comes out clean. Cool in the pan for a few minutes before transferring to a wire rack.
- For the frosting, beat together 1/2 cup softened butter, 2 cups powdered sugar, 1 tsp cinnamon, and 1-2 tbsp milk until smooth.
- Once cooled, frost the cupcakes and garnish with chopped walnuts or a sprinkle of cinnamon.
