Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin pan with paper liners.
  2. In a skillet, melt 1 tbsp of butter over medium heat, add diced apples, cinnamon, and brown sugar. Sauté for 5-7 minutes and let cool.
  3. Cream together softened butter and sugars until light and fluffy. Add eggs one at a time, mixing well. Then, add milk and vanilla extract.
  4. Whisk together flour, baking powder, baking soda, salt, and cinnamon. Gradually combine with wet ingredients, mixing until just combined.
  5. Divide half of the batter into muffin cups, add sautéed apple filling, and top with remaining batter.
  6. Bake for 18-20 minutes, or until a toothpick comes out clean. Cool in the pan for a few minutes before transferring to a wire rack.
  7. For the frosting, beat together 1/2 cup softened butter, 2 cups powdered sugar, 1 tsp cinnamon, and 1-2 tbsp milk until smooth.
  8. Once cooled, frost the cupcakes and garnish with chopped walnuts or a sprinkle of cinnamon.
