Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add all-purpose flour, cinnamon, and a pinch of salt, mixing until just combined.
- Prepare apple filling by tossing chopped apples with sugar, cinnamon, and lemon juice.
- Spoon dough onto baking sheet, make a well in each cookie, and add a spoonful of apple filling.
- Cover with more dough, bake for 12-15 minutes until edges are golden brown.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
