- 1/4 cup granulated sugar
- 1/2 cup brown sugar
- 1 1/2 cups all-purpose flour

- 3 cups fresh apples (Granny Smith or Fuji), peeled and diced
- 1/4 cup granulated sugar (for apple filling)
- 1 teaspoon ground cinnamon
- 1 tablespoon fresh lemon juice
- 1 cup old-fashioned oats
- 1/2 cup brown sugar (for topping)
- 1 teaspoon cinnamon (for topping)
- A pinch of salt (for topping)
- 1/4 cup melted butter (for topping)
Instructions
- Preheat your oven to 350°F (175°C). Cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the all-purpose flour, baking soda, and a pinch of salt, stirring until blended.
- Grease a muffin tin and press small portions of dough into the bottom and sides of each cup.
- In a separate bowl, toss the diced apples with sugar, cinnamon, and lemon juice.
- Spoon the apple mixture into each cookie cup.
- In another bowl, mix oats, brown sugar, cinnamon, a pinch of salt, and melted butter to create the topping. Sprinkle over the apples.
- Bake for 18-20 minutes until edges are golden and apples are bubbly. Allow to cool slightly before serving.
Notes
