- 4 Bone-in, skin-on chicken thighs
- 1 cup apple cider
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons Dijon mustard
- 2 tablespoons soy sauce
- 2 tablespoons butter
- Fresh thyme or rosemary, to taste
- Salt and pepper, to taste
Instructions
- Pat the chicken thighs dry and season with salt and pepper.
- In a skillet over medium-high heat, melt butter and sear the chicken thighs skin-side down for 5-7 minutes until golden brown. Flip and sear the other side.
- Remove the chicken and sauté onions and garlic in the same skillet until translucent.
- Add apple cider, mustard, soy sauce, and herbs to the skillet, scraping the bottom for flavor.
- Return the chicken, skin-side up, to the skillet. Simmer covered for 25-30 minutes.
- Once cooked, remove the chicken and reduce the sauce over medium-high heat until thickened, about 5-10 minutes. Return the chicken to coat in the glaze.
- Serve the chicken plated with extra glaze drizzled on top.
Notes
Chicken should reach an internal temperature of 165°F. Pair with mashed potatoes or sautéed greens.
