  • Fresh mushrooms (8 ounces)
  • Olive oil (2 tablespoons)
  • Fresh garlic (2 cloves, minced)
  • White wine or balsamic vinegar (2 tablespoons)
  • Creamy cheese (4 ounces, such as goat cheese or cream cheese)
  • Fresh herbs (1 tablespoon, chopped)

Instructions

  1. In a large skillet over medium heat, warm the olive oil. Add the mushrooms and a pinch of salt. Stir regularly, letting them cook down for about 5-7 minutes until golden brown.
  2. Toss in the minced garlic and sauté for an additional 1-2 minutes until fragrant. Add the white wine or balsamic vinegar, scraping the bottom of the skillet to lift any flavorful bits. Allow it to simmer for another 2 minutes.
  3. Reduce the heat to low, then stir in the cheese until it becomes creamy and melds with the mushrooms.
  4. Mix in the chopped fresh herbs, and season with black pepper to taste.
  5. Spoon the mixture onto small crostini or into individual serving dishes. Garnish with additional herbs or a sprinkle of chili flakes for a spicy kick.
