A warm and comforting treat made with ripe bananas and browned butter, these blondies are a family favorite that balances sweet and salty flavors.

- 2 medium ripe bananas
- 2/3 cup (150 g) unsalted butter
- 3/4 cup (150 g) dark brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup (125 g) all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup chopped walnuts or pecans (optional)
- 3/4 cup dark chocolate chips (optional)
- 1 tablespoon maple syrup (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan, lining it with parchment paper.
- Melt the butter in a saucepan until the milk solids brown lightly, then let it cool slightly.
- In a bowl, mash the bananas until almost smooth.
- In another bowl, whisk the dark brown sugar and egg until glossy, then whisk in the vanilla extract and cooled browned butter.
- Stir the mashed bananas into the wet mixture until even.
- Sift together the flour, baking powder, and salt in a separate bowl, then gradually fold into the wet batter until no streaks of flour remain.
- Fold in the optional nuts or chocolate chips.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 22-28 minutes, or until a toothpick comes out with a few moist crumbs.
- Allow to cool on a wire rack for at least 20 minutes before slicing into squares.
Notes
For chewier blondies, reduce baking time by a couple of minutes. For a lighter version, reduce sugar by 25% and add ground flaxseed for added fiber.
