Description

A warm and comforting treat made with ripe bananas and browned butter, these blondies are a family favorite that balances sweet and salty flavors.


Ingredients

  • 2 medium ripe bananas
  • 2/3 cup (150 g) unsalted butter
  • 3/4 cup (150 g) dark brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup (125 g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)
  • 3/4 cup dark chocolate chips (optional)
  • 1 tablespoon maple syrup (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan, lining it with parchment paper.
  2. Melt the butter in a saucepan until the milk solids brown lightly, then let it cool slightly.
  3. In a bowl, mash the bananas until almost smooth.
  4. In another bowl, whisk the dark brown sugar and egg until glossy, then whisk in the vanilla extract and cooled browned butter.
  5. Stir the mashed bananas into the wet mixture until even.
  6. Sift together the flour, baking powder, and salt in a separate bowl, then gradually fold into the wet batter until no streaks of flour remain.
  7. Fold in the optional nuts or chocolate chips.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake for 22-28 minutes, or until a toothpick comes out with a few moist crumbs.
  10. Allow to cool on a wire rack for at least 20 minutes before slicing into squares.

Notes

For chewier blondies, reduce baking time by a couple of minutes. For a lighter version, reduce sugar by 25% and add ground flaxseed for added fiber.
