Ingredients

  • 2 cups shredded chicken (rotisserie or cooked)
  • 2 cans white beans (Cannellini or Great Northern)
  • 4 cups chicken broth (low-sodium)
  • 1 can diced green chilies
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup sour cream or cream cheese
  • Olive oil for sautéing

Instructions

  1. In a large pot, heat a splash of olive oil over medium heat. Add chopped onion and garlic, cooking until they turn translucent and fragrant.
  2. Toss in the shredded chicken, cooking through if using raw chicken.
  3. Sprinkle in cumin, garlic powder, and onion powder, stirring until well-coated.
  4. Add the white beans and chicken broth, bringing to a gentle simmer.
  5. Stir in the green chilies and let simmer for 20-30 minutes.
  6. Before serving, add sour cream or cream cheese to enrich the texture. Stir until fully incorporated.
  7. Serve hot, garnished with cilantro and toppings of choice.
