Description
A warming and nourishing soup made with caramelized onions, rich vegetable broth, and topped with crusty bread and melted cheese.

- 4 tablespoons unsalted butter
- 6 cups vegetable broth
- 2 large yellow onions, sliced thinly
- 2 large sweet onions, sliced thinly
- 1 tablespoon fresh thyme (or dried thyme)
- 1 tablespoon flour
- 1 splash white wine
- Crusty bread (sourdough or baguette)
- Gruyere cheese, shredded
Instructions
- In a large, heavy-bottomed skillet or pot, melt the unsalted butter over medium-low heat. Add the sliced onions and a pinch of salt, stirring occasionally. Cook for 30-40 minutes until caramelized.
- Stir in the fresh thyme and flour and cook for another minute.
- Add a splash of white wine, scraping the bottom of the pot, and simmer until the alcohol evaporates.
- Add the vegetable broth and reduce the heat to low. Let it simmer for about 30 minutes.
- While the soup simmers, toast slices of your bread until golden brown.
- Ladle the soup into oven-safe bowls, top with a slice of toasted bread, and sprinkle with shredded cheese.
- Place the bowls under the broiler until the cheese is bubbling and golden brown.
- Remove from oven and let cool for a moment before serving, garnished with additional thyme if desired.
Notes
For extra flavor, consider using homemade vegetable stock or adding a touch of balsamic vinegar.
