Delicious Vegetarian French Onion Soup

Description

A warming and nourishing soup made with caramelized onions, rich vegetable broth, and topped with crusty bread and melted cheese.


Ingredients

  • 4 tablespoons unsalted butter
  • 6 cups vegetable broth
  • 2 large yellow onions, sliced thinly
  • 2 large sweet onions, sliced thinly
  • 1 tablespoon fresh thyme (or dried thyme)
  • 1 tablespoon flour
  • 1 splash white wine
  • Crusty bread (sourdough or baguette)
  • Gruyere cheese, shredded

Instructions

  1. In a large, heavy-bottomed skillet or pot, melt the unsalted butter over medium-low heat. Add the sliced onions and a pinch of salt, stirring occasionally. Cook for 30-40 minutes until caramelized.
  2. Stir in the fresh thyme and flour and cook for another minute.
  3. Add a splash of white wine, scraping the bottom of the pot, and simmer until the alcohol evaporates.
  4. Add the vegetable broth and reduce the heat to low. Let it simmer for about 30 minutes.
  5. While the soup simmers, toast slices of your bread until golden brown.
  6. Ladle the soup into oven-safe bowls, top with a slice of toasted bread, and sprinkle with shredded cheese.
  7. Place the bowls under the broiler until the cheese is bubbling and golden brown.
  8. Remove from oven and let cool for a moment before serving, garnished with additional thyme if desired.

Notes

For extra flavor, consider using homemade vegetable stock or adding a touch of balsamic vinegar.
