Ingredients

- 1 pound beef chuck, cut into cubes
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 cup green beans, trimmed and cut
- 1 cup mushrooms, sliced
- 6 cups beef broth
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef and brown on all sides, about 5-7 minutes.
- Add the onion and garlic; cook until soft and fragrant, about 3 minutes.
- Add carrots, potatoes, mushrooms, and green beans. Stir in the beef broth, dried thyme, and oregano. Season with salt and pepper.
- Bring to a boil, then reduce to a simmer. Cover and cook for about 90-120 minutes, or until the beef is tender.
- Taste and adjust seasoning as needed, then serve with a sprinkle of fresh parsley.
Notes
For a lighter version, substitute chicken for beef or use seasonal vegetables. Freezing leftovers is recommended for up to 3 months.
