Description

A comforting and nutrient-rich soup made with tender chunks of beef and a vibrant mix of vegetables.


Ingredients

  • 1 pound beef chuck, cut into cubes
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 cup green beans, trimmed and cut
  • 1 cup mushrooms, sliced
  • 6 cups beef broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef and brown on all sides, about 5-7 minutes.
  2. Add the onion and garlic; cook until soft and fragrant, about 3 minutes.
  3. Add carrots, potatoes, mushrooms, and green beans. Stir in the beef broth, dried thyme, and oregano. Season with salt and pepper.
  4. Bring to a boil, then reduce to a simmer. Cover and cook for about 90-120 minutes, or until the beef is tender.
  5. Taste and adjust seasoning as needed, then serve with a sprinkle of fresh parsley.

Notes

For a lighter version, substitute chicken for beef or use seasonal vegetables. Freezing leftovers is recommended for up to 3 months.
