- 1 pound fresh turnip greens (stems removed and coarsely chopped)
- 1 medium onion (chopped)
- 2 cloves garlic (minced)
- 2 medium potatoes (peeled and diced)
- 4 cups vegetable broth (or chicken broth)
- 1 cup heavy cream (or coconut milk)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Red pepper flakes (optional)
- Fresh herbs for garnish (e.g., parsley or thyme)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onions and garlic, sautéing until they are translucent (about 5 minutes).
- Add the diced potatoes and stir to coat them with the onion-garlic mix. Pour in the vegetable broth and bring to a simmer. Cook for 15-20 minutes or until potatoes are tender.
- Once the potatoes are cooked, add the turnip greens to the pot and stir until they wilt (about 5 minutes).
- Use an immersion blender to puree the soup in the pot, or carefully transfer batches to a regular blender and blend until smooth.
- Return blended soup to low heat and stir in the heavy cream, seasoning with salt, pepper, and red pepper flakes. Heat for a few minutes.
- Ladle the soup into bowls and garnish with fresh herbs. Serve warm with crusty bread.
Notes
For a lighter version, swap heavy cream for a low-fat alternative. The soup can also be frozen without cream; add cream after reheating.
