Ingredients

  • 4 Sweet Potatoes
  • 2 tablespoons Olive Oil
  • Salt to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the sweet potatoes (peeling is optional).
  3. Cut the sweet potatoes into 1-inch cubes.
  4. Toss the cubes in a mixing bowl with olive oil, salt, and pepper until well coated.
  5. Spread them evenly on a baking sheet lined with parchment paper.
  6. Roast in the oven for 25-30 minutes, stirring halfway through.
  7. Sprinkle herbs or spices during the last 10 minutes of cooking if desired.
