Warm, buttery rolls filled with tangy pickled walnuts and a blend of creamy cheeses, perfect for any occasion.

- 1 package puff pastry, thawed (or equivalent homemade dough)
- 8 oz cream cheese, softened
- 4 oz aged cheddar, grated
- 2 oz goat cheese or blue cheese, crumbled (optional)
- 1 cup pickled walnuts, roughly chopped
- 1 small shallot, finely chopped and lightly sautéed
- 2 tablespoons fresh parsley, chopped
- 1 egg, beaten (for egg wash)
- 2 tablespoons unsalted butter, melted
- Salt and black pepper to taste
- Pinch of red pepper flakes (optional)
Instructions
- Preheat the oven to 400°F (205°C) and line a baking sheet with parchment.
- In a bowl, combine cream cheese, grated cheddar, crumbled goat or blue cheese, sautéed shallot, parsley, and a pinch of salt and pepper. Stir until smooth.
- Fold in chopped pickled walnuts and red pepper flakes if desired.
- Roll the puff pastry on a lightly floured surface into a rectangle, approximately 12 x 9 inches. Spread the filling evenly, leaving a small border.
- Starting from the long side, roll the pastry tightly and pinch the seam to seal. Slice into 10–12 rolls, about 1 inch thick.
- Place the rolls cut-side up on the prepared sheet, brush with beaten egg and melted butter.
- Bake for 18–22 minutes until golden brown and cheese bubbles at the edges. Serve warm.
Notes
For deeper flavor, brown the butter before brushing. Chill filled log briefly if the dough softens too much while cutting.
