Ingredients

- 2 cups jasmine or basmati rice
- 2 tablespoons olive oil or unsalted butter
- 1 medium onion, finely chopped
- 3 cloves of fresh garlic, minced
- 1 teaspoon turmeric or saffron
- Zest and juice of 1 large orange
- 4 cups vegetable or chicken broth
- Salt and pepper, to taste
- Fresh herbs like parsley or cilantro, for garnish
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a large skillet, heat olive oil or butter over medium heat. Add chopped onions and sauté until translucent, about 3-4 minutes. Stir in minced garlic and sauté for another minute.
- Add the rinsed rice, stirring to coat with oil and mix with onions and garlic.
- Incorporate turmeric or saffron, orange zest, and juice into the rice. Pour in broth, season with salt and pepper, and bring to a gentle boil.
- Cover with a lid, reduce heat to low, and simmer undisturbed for 15-18 minutes until the rice absorbs all the liquid.
- Turn off the heat, let it sit covered for 5 minutes, then fluff with a fork and garnish with herbs before serving.
Notes
For added flavor, consider using homemade stock instead of water. You can also add sautéed bell peppers or peas for extra color and nutrients.
