- 8 ounces mushrooms (cremini or shiitake)
- 3 cloves garlic, minced
- 2 shallots, finely chopped
- 3 tablespoons olive oil
- 2 tablespoons butter
- ½ cup white wine (optional)
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- Fresh herbs (parsley or thyme, finely chopped)
- Salt and pepper to taste
Instructions
- Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about a cup of the pasta water, then drain and set aside.
- Sauté the Aromatics: In a large skillet, heat the olive oil and butter over medium heat. Add the chopped shallots and minced garlic, sautéing until fragrant—about 2 minutes.
- Add the Mushrooms: Toss in the sliced mushrooms, sauté until tender, about 5-7 minutes.
- Deglaze with Wine: If using, pour in the white wine, scraping any brown bits from the bottom of the skillet and allow it to simmer for about 3 minutes.
- Create the Sauce: Lower the heat, stir in the heavy cream, and let it simmer gently. Incorporate reserved pasta water for the desired creamy consistency.
- Combine with Pasta: Add the drained pasta, toss to coat with the sauce, and stir in the Parmesan cheese and fresh herbs. Season with salt and pepper.
- Serve and Enjoy: Serve topped with additional Parmesan and herbs. Gather around the table and enjoy.

For added texture, sprinkle toasted pine nuts over the top before serving.
