Description

A refreshing snack that balances buttery richness with bright lemon zest, perfect for gatherings or a sweet treat at home.


Ingredients

  • 9 cups crisp rice cereal (or chex-style cereal)
  • 1 cup unsalted butter (or coconut oil for dairy-free)
  • 1/2 cup powdered sugar, plus more for coating
  • 1/2 cup granulated sugar
  • Zest of 2 large lemons and 2 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract
  • Pinch of fine sea salt
  • Optional: white chocolate chips, toasted sliced almonds, dried blueberries, or crushed shortbread cookies

Instructions

  1. Prepare a large bowl and measure the cereal into it.
  2. Melt the butter in a medium saucepan over medium heat until it slightly browns.
  3. Whisk in granulated sugar until dissolved, then stir in lemon zest, lemon juice, and vanilla.
  4. Pour the mixture over the cereal and fold gently until coated.
  5. Transfer to a zip-top bag with powdered sugar, seal, and shake until coated. Spread on parchment to cool and store in an airtight container.

Notes

For lighter texture, swap half the butter for oil. Use fresh lemon zest for the best flavor.
