Description

A flavorful blend of sautéed chicken, zesty lemon, and fresh herbs harmonized with pasta for a comforting family favorite.


Ingredients

  • 1 lb Chicken Breast (or thighs for richer flavor)
  • 8 oz Pasta (fettuccine or any preferred shape)
  • 3 cloves Fresh Garlic, minced
  • 1 Lemon, juiced and zested
  • 1 tsp Freshly Cracked Black Pepper
  • 1/4 cup Fresh Parsley or Basil, chopped
  • 2 tbsp Butter
  • 1 tbsp Olive Oil
  • Salt to taste
  • Pasta water, reserved

Instructions

  1. Cook pasta according to package instructions, reserving 1 cup of starchy pasta water before draining.
  2. In a large skillet, heat olive oil and butter over medium heat.
  3. Add minced garlic and sauté until fragrant, about 30 seconds.
  4. Introduce seasoned chicken, cooking until golden brown and cooked through, 5-7 minutes on each side.
  5. Remove chicken from skillet, let it rest for a few minutes, then slice into bite-sized pieces.
  6. With skillet off heat, add drained pasta, sliced chicken, lemon juice, lemon zest, and a little reserved pasta water. Toss to combine.
  7. Incorporate chopped herbs, adjust seasoning, and add more pasta water if needed.
  8. Serve warm, garnished with extra lemon zest or fresh herbs.

Notes

Using a meat thermometer ensures chicken is cooked to 165°F. Don’t skip on reserved pasta water as it helps with the sauce’s consistency.
