- 1 lb Chicken Breast (or thighs for richer flavor)
- 8 oz Pasta (fettuccine or any preferred shape)
- 3 cloves Fresh Garlic, minced
- 1 Lemon, juiced and zested
- 1 tsp Freshly Cracked Black Pepper
- 1/4 cup Fresh Parsley or Basil, chopped
- 2 tbsp Butter
- 1 tbsp Olive Oil
- Salt to taste
- Pasta water, reserved
Instructions
- Cook pasta according to package instructions, reserving 1 cup of starchy pasta water before draining.
- In a large skillet, heat olive oil and butter over medium heat.
- Add minced garlic and sauté until fragrant, about 30 seconds.
- Introduce seasoned chicken, cooking until golden brown and cooked through, 5-7 minutes on each side.
- Remove chicken from skillet, let it rest for a few minutes, then slice into bite-sized pieces.
- With skillet off heat, add drained pasta, sliced chicken, lemon juice, lemon zest, and a little reserved pasta water. Toss to combine.
- Incorporate chopped herbs, adjust seasoning, and add more pasta water if needed.
- Serve warm, garnished with extra lemon zest or fresh herbs.
Notes
Using a meat thermometer ensures chicken is cooked to 165°F. Don’t skip on reserved pasta water as it helps with the sauce’s consistency.
