Ingredients

- 1 ½ cups all-purpose flour
- ½ cup sugar
- A pinch of salt
- ½ cup cold, diced unsalted butter
- 2 large eggs
- 1 cup sugar
- 1/3 cup fresh lemon juice
- 2 tablespoons lemon zest
- 2 tablespoons cornstarch
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish and line it with parchment paper.
- In a mixing bowl, combine the flour, sugar, and salt. Cut in the butter until crumbly. Press into the bottom of the dish.
- Bake crust for 15-20 minutes until lightly golden.
- While the crust bakes, whisk together eggs, sugar, lemon juice, lemon zest, and cornstarch until smooth.
- Pour lemon filling over the hot crust and bake for another 20-25 minutes until set.
- Cool completely in the dish, then lift out with parchment paper, cut into squares, and dust with powdered sugar.
Notes
For the freshest flavor, use fresh lemons for zest and juice. Let the crust cool before adding the filling to avoid separation.
