Description

A quick and savory stuffing made with buttery breadcrumbs and earthy mushrooms, perfect for Thanksgiving or any cozy meal.

Ingredients

Scale
  • 10 cups stale bread cubes (sourdough or country white)
  • 6 tablespoons unsalted butter (or olive oil for dairy-free)
  • 1 large yellow onion, finely diced
  • 3 stalks celery, thinly sliced
  • 8 ounces mushrooms, sliced (cremini or button)
  • 3 cloves fresh garlic, minced (or dried garlic)
  • 2 tablespoons fresh herbs (thyme and rosemary, chopped)
  • 2 1/2 cups chicken or vegetable broth (low-sodium preferred)
  • Salt and freshly ground black pepper to taste
  • Optional: cooked sausage, diced apples, chopped pecans, or dried cranberries

Instructions

  1. Prepare all ingredients: tear the bread into cubes and set it on a sheet pan to dry if needed. Chop the vegetables and measure the broth.
  2. Set the Instant Pot to Sauté and melt the butter until foamy. Add the onion and celery; cook until translucent and slightly golden.
  3. Add the sliced mushrooms and continue to sauté until they release their liquid and begin to brown.
  4. Stir in the garlic and fresh herbs, cooking for 30 to 60 seconds until fragrant.
  5. Turn off Sauté. Add the bread cubes to the pot and toss gently. Pour the warm broth over the bread and season with salt and pepper, compacting slightly.
  6. Secure the lid and set the Instant Pot to Manual/High Pressure for 5 minutes. Use natural release for 5 minutes before quick-releasing any remaining pressure.
  7. Open the lid and fluff the dressing with a fork. Adjust seasoning and, if desired, spread on a baking sheet and bake at 375°F for 10–12 minutes for a crisp top.

Notes

Use warm broth for even cooking. Avoid packing the pot too tightly. For a crispy topping, dot with butter before baking.
