Description

A comforting apple pie with a buttery, flaky crust and a sweet-tart apple filling, balanced with warm spices.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup (2 sticks) cold, unsalted butter
  • 68 tablespoons ice water
  • 68 medium apples (about 3 pounds, mix of tart and sweet)
  • 3/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • A pinch of salt
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon cold butter (for dotting)
  • 1 beaten egg (for egg wash)
  • 1 tablespoon water (for egg wash)
  • 1 tablespoon sugar (for sprinkling)

Instructions

  1. Combine flour, salt, and sugar in a large bowl.
  2. Cut in cold butter until mixture resembles pea-sized crumbs.
  3. Add ice water a tablespoon at a time until dough holds together.
  4. Divide dough into two discs, wrap, and chill for at least 1 hour.
  5. Peel, core, and slice the apples, then toss with sugars, cornstarch, spices, salt, and lemon juice. Let sit for 10 minutes.
  6. Preheat oven to 425°F (220°C).
  7. Roll one dough disc into a 12-inch circle and fit into a pie pan. Fill with apple mixture, mounding slightly.
  8. Dot the filling with cold butter, then roll out the second dough disc to create a top crust and seal edges. Brush with egg wash and sprinkle with sugar.
  9. Bake at 425°F for 20 minutes, then lower to 375°F (190°C) and bake for an additional 35-45 minutes until golden.
  10. Let rest for at least 2 hours before slicing.

Notes

Chill the pie after assembly for 30 minutes to prevent shrinking. Brush with browned butter for a richer crust.
