- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 cup (2 sticks) cold, unsalted butter
- 6–8 tablespoons ice water
- 6–8 medium apples (about 3 pounds, mix of tart and sweet)
- 3/4 cup granulated sugar
- 1/4 cup packed brown sugar
- 2 tablespoons cornstarch
- 1 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg
- A pinch of salt
- 1 tablespoon fresh lemon juice
- 1 tablespoon cold butter (for dotting)
- 1 beaten egg (for egg wash)
- 1 tablespoon water (for egg wash)
- 1 tablespoon sugar (for sprinkling)
Instructions
- Combine flour, salt, and sugar in a large bowl.
- Cut in cold butter until mixture resembles pea-sized crumbs.
- Add ice water a tablespoon at a time until dough holds together.
- Divide dough into two discs, wrap, and chill for at least 1 hour.
- Peel, core, and slice the apples, then toss with sugars, cornstarch, spices, salt, and lemon juice. Let sit for 10 minutes.
- Preheat oven to 425°F (220°C).
- Roll one dough disc into a 12-inch circle and fit into a pie pan. Fill with apple mixture, mounding slightly.
- Dot the filling with cold butter, then roll out the second dough disc to create a top crust and seal edges. Brush with egg wash and sprinkle with sugar.
- Bake at 425°F for 20 minutes, then lower to 375°F (190°C) and bake for an additional 35-45 minutes until golden.
- Let rest for at least 2 hours before slicing.
Notes
Chill the pie after assembly for 30 minutes to prevent shrinking. Brush with browned butter for a richer crust.
