Ingredients

- 6 cups gluten-free puffed rice cereal
- 10 ounces marshmallows (large or mini)
- 3 tablespoons unsalted butter (or coconut oil for dairy-free)
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon fine sea salt
- Optional mix-ins: toasted coconut, mini chocolate chips, chopped nuts, almond butter
Instructions
- Lightly butter an 8×8-inch baking pan and line it with parchment paper.
- Measure the puffed rice cereal into a large mixing bowl.
- In a medium saucepan, melt the unsalted butter over low heat and then add the marshmallows.
- Stir until the marshmallows melt into a smooth mixture; remove from heat.
- Stir in the vanilla extract and sea salt.
- Pour the marshmallow mixture over the cereal and fold gently.
- Transfer to the lined pan and press evenly into the pan.
- Let cool at room temperature for at least 30 minutes before cutting.
- Store in an airtight container for up to 3 days.
Notes
Use a silicone spatula to prevent sticking. Brown the butter for added flavor. Store bars in an airtight container with parchment between layers.
