Description

A nostalgic blend of textures and tastes, these gluten-free Rice Krispie treats bring comfort and creativity to any gathering.


Ingredients

  • 6 cups gluten-free puffed rice cereal
  • 10 ounces marshmallows (large or mini)
  • 3 tablespoons unsalted butter (or coconut oil for dairy-free)
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon fine sea salt
  • Optional mix-ins: toasted coconut, mini chocolate chips, chopped nuts, almond butter

Instructions

  1. Lightly butter an 8×8-inch baking pan and line it with parchment paper.
  2. Measure the puffed rice cereal into a large mixing bowl.
  3. In a medium saucepan, melt the unsalted butter over low heat and then add the marshmallows.
  4. Stir until the marshmallows melt into a smooth mixture; remove from heat.
  5. Stir in the vanilla extract and sea salt.
  6. Pour the marshmallow mixture over the cereal and fold gently.
  7. Transfer to the lined pan and press evenly into the pan.
  8. Let cool at room temperature for at least 30 minutes before cutting.
  9. Store in an airtight container for up to 3 days.

Notes

Use a silicone spatula to prevent sticking. Brown the butter for added flavor. Store bars in an airtight container with parchment between layers.
