Description

A healthy and flavorful alternative to traditional bread, made with cauliflower, cheese, and herbs.


Ingredients

  • 1 medium head cauliflower
  • 1 cup mozzarella cheese (or cheddar, gouda, or dairy-free alternative)
  • 2 large eggs (or flaxseed meal mixed with water for egg-free)
  • 1/2 cup almond flour (or coconut flour, or oat flour)
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • Fresh herbs (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Chop the cauliflower into florets and steam until tender, then let cool.
  3. Wrap the cauliflower in a clean kitchen towel and squeeze out excess moisture.
  4. In a bowl, combine the cauliflower, eggs, cheese, almond flour, and herbs.
  5. Pour the mixture onto the baking sheet, shaping it into a loaf or disk.
  6. Bake for 30 minutes or until golden brown and crispy on the edges.
  7. Cool for at least 10 minutes before slicing.

Notes

Ensure the cauliflower is well-drained for the best texture. Optional additions include sautéed mushrooms or sun-dried tomatoes.
