- 1 medium head cauliflower
- 1 cup mozzarella cheese (or cheddar, gouda, or dairy-free alternative)
- 2 large eggs (or flaxseed meal mixed with water for egg-free)
- 1/2 cup almond flour (or coconut flour, or oat flour)
- Salt and pepper to taste
- 1 tsp garlic powder
- Fresh herbs (optional)
Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Chop the cauliflower into florets and steam until tender, then let cool.
- Wrap the cauliflower in a clean kitchen towel and squeeze out excess moisture.
- In a bowl, combine the cauliflower, eggs, cheese, almond flour, and herbs.
- Pour the mixture onto the baking sheet, shaping it into a loaf or disk.
- Bake for 30 minutes or until golden brown and crispy on the edges.
- Cool for at least 10 minutes before slicing.
Notes
Ensure the cauliflower is well-drained for the best texture. Optional additions include sautéed mushrooms or sun-dried tomatoes.
