Ingredients

  • 4 large eggs, at room temperature
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 2 cups grated carrots
  • 1/4 cup vegetable oil or melted butter
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp lemon or orange zest
  • Optional: chopped walnuts or pecans, raisins, and a pinch of sea salt

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease the paper.
  2. Whisk eggs and granulated sugar in a large bowl until pale and thick (about 3–4 minutes).
  3. Sift together flour, baking powder, salt, and spices, then fold into the egg mixture gently with a spatula.
  4. Fold in the oil, then add grated carrots and any optional mix-ins.
  5. Spread the batter evenly in the prepared pan and bake for 12–15 minutes or until the top springs back lightly.
  6. Invert onto a powdered sugar-dusted towel, peel off the parchment, and roll the cake up in the towel from the short end. Cool completely while rolled.
  7. For the filling, beat cream cheese with butter (if using), powdered sugar, vanilla, and citrus zest until smooth. Chill.
  8. Unroll the cooled cake, spread with cream cheese filling, and reroll gently. Trim ends for a neat presentation and chill for at least an hour before slicing.
  9. Slice with a serrated knife and serve slightly chilled or at room temperature.

Notes

Use room-temperature ingredients for best results and roll the cake while it’s warm to prevent cracking.
