- 4 large eggs, at room temperature
- 1 cup granulated sugar
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
- 2 cups grated carrots
- 1/4 cup vegetable oil or melted butter
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 1 tsp lemon or orange zest
- Optional: chopped walnuts or pecans, raisins, and a pinch of sea salt
Instructions
- Preheat the oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease the paper.
- Whisk eggs and granulated sugar in a large bowl until pale and thick (about 3–4 minutes).
- Sift together flour, baking powder, salt, and spices, then fold into the egg mixture gently with a spatula.
- Fold in the oil, then add grated carrots and any optional mix-ins.
- Spread the batter evenly in the prepared pan and bake for 12–15 minutes or until the top springs back lightly.
- Invert onto a powdered sugar-dusted towel, peel off the parchment, and roll the cake up in the towel from the short end. Cool completely while rolled.
- For the filling, beat cream cheese with butter (if using), powdered sugar, vanilla, and citrus zest until smooth. Chill.
- Unroll the cooled cake, spread with cream cheese filling, and reroll gently. Trim ends for a neat presentation and chill for at least an hour before slicing.
- Slice with a serrated knife and serve slightly chilled or at room temperature.
