Description

Indulgent cookies with a fudgy center and crispy edges, combining the best qualities of brownies and cookies.


Ingredients

  • 1 cup unsalted butter (lightly browned or melted)
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs (room temperature)
  • 2 teaspoons vanilla extract
  • 1 ¾ cups all-purpose flour (or 1:1 gluten-free flour blend)
  • ¾ cup cocoa powder (Dutch-processed or natural)
  • 1 teaspoon espresso powder (optional)
  • 1 teaspoon salt
  • 1 ½ cups dark chocolate chunks (60–70% cocoa)
  • Flaky sea salt (for finishing)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Melt the dark chocolate and butter together in a double boiler or heatproof bowl set over simmering water, stirring until smooth.
  3. Remove from heat and cool slightly. Whisk the granulated and brown sugars with the room-temperature eggs until glossy and slightly thick.
  4. Add the vanilla and the cooled chocolate-butter mixture, stirring until uniform.
  5. Sift together the flour, cocoa powder, espresso powder, and salt; fold the dry mix into the wet batter just until combined.
  6. Gently fold in the chocolate chunks.
  7. Chill the dough for at least 30 minutes to control spread.
  8. Scoop tablespoon-sized mounds onto prepared sheets, spaced two inches apart.
  9. Bake for 9–12 minutes, watching for set edges and soft centers. Finish each cookie with a sprinkle of flaky sea salt while still warm.
  10. For chewier cookies, slightly underbake and cool on the baking sheet; for crisp edges, extend baking by a minute or two, but avoid overbaking the center.

Notes

Browned butter adds a nutty flavor; room-temperature eggs improve texture. Chill the dough to prevent excess spread.
