- 1 cup unsalted butter (lightly browned or melted)
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 large eggs (room temperature)
- 2 teaspoons vanilla extract
- 1 ¾ cups all-purpose flour (or 1:1 gluten-free flour blend)
- ¾ cup cocoa powder (Dutch-processed or natural)
- 1 teaspoon espresso powder (optional)
- 1 teaspoon salt
- 1 ½ cups dark chocolate chunks (60–70% cocoa)
- Flaky sea salt (for finishing)
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Melt the dark chocolate and butter together in a double boiler or heatproof bowl set over simmering water, stirring until smooth.
- Remove from heat and cool slightly. Whisk the granulated and brown sugars with the room-temperature eggs until glossy and slightly thick.
- Add the vanilla and the cooled chocolate-butter mixture, stirring until uniform.
- Sift together the flour, cocoa powder, espresso powder, and salt; fold the dry mix into the wet batter just until combined.
- Gently fold in the chocolate chunks.
- Chill the dough for at least 30 minutes to control spread.
- Scoop tablespoon-sized mounds onto prepared sheets, spaced two inches apart.
- Bake for 9–12 minutes, watching for set edges and soft centers. Finish each cookie with a sprinkle of flaky sea salt while still warm.
- For chewier cookies, slightly underbake and cool on the baking sheet; for crisp edges, extend baking by a minute or two, but avoid overbaking the center.
Notes
Browned butter adds a nutty flavor; room-temperature eggs improve texture. Chill the dough to prevent excess spread.
