- 1/2 cup chocolate chunks
- 1/2 cup toasted walnuts, chopped
- 1/2 cup sweetened cream cheese (optional, for swirl)
Instructions
- Prepare one standard loaf pan (9×5 inches) and preheat your oven to 350°F (175°C).
- In a bowl, combine flour, cocoa powder, baking powder, baking soda, and salt. Whisk until even.
- In a separate bowl, cream together the butter, brown sugar, and granulated sugar until glossy. Add the eggs one at a time, followed by the vanilla and coffee.
- Gently mix the dry ingredients into the wet mixture until just combined. Avoid overmixing.
- Fold in chocolate chunks and walnuts, and optionally add the cream cheese for a swirl.
- Spoon batter into the prepared pan and smooth the top. Bake for 40–50 minutes, checking at 38 minutes for doneness.
- Cool in the pan for 10 minutes then transfer to a rack to cool completely before slicing.
Notes
Brown the butter for added flavor. Chill the batter for tighter, fudgier pockets. To prevent sinking, coat mix-ins lightly with flour.
