Ingredients

  • 1 3/4 cups all-purpose flour (can substitute half with whole wheat)
  • 3/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon fine salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup brewed coffee or strong espresso
  • 1/2 cup chocolate chunks
  • 1/2 cup toasted walnuts, chopped
  • 1/2 cup sweetened cream cheese (optional, for swirl)

Instructions

  1. Prepare one standard loaf pan (9×5 inches) and preheat your oven to 350°F (175°C).
  2. In a bowl, combine flour, cocoa powder, baking powder, baking soda, and salt. Whisk until even.
  3. In a separate bowl, cream together the butter, brown sugar, and granulated sugar until glossy. Add the eggs one at a time, followed by the vanilla and coffee.
  4. Gently mix the dry ingredients into the wet mixture until just combined. Avoid overmixing.
  5. Fold in chocolate chunks and walnuts, and optionally add the cream cheese for a swirl.
  6. Spoon batter into the prepared pan and smooth the top. Bake for 40–50 minutes, checking at 38 minutes for doneness.
  7. Cool in the pan for 10 minutes then transfer to a rack to cool completely before slicing.

Notes

Brown the butter for added flavor. Chill the batter for tighter, fudgier pockets. To prevent sinking, coat mix-ins lightly with flour.
