Ingredients

  • 2 cups all-purpose flour (or almond flour for gluten-free)
  • 1 cup rolled oats
  • ¾ cup brown sugar (or coconut sugar)
  • ½ cup granulated sugar (can be reduced or omitted)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons cinnamon
  • ½ teaspoon nutmeg
  • 2 medium apples, peeled and diced
  • 1 cup chopped walnuts or pecans (optional)
  • ½ cup unsalted butter, softened

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, oats, brown sugar, granulated sugar, baking soda, salt, and spices.
  3. Cut the softened unsalted butter into the dry mixture until it resembles coarse crumbs.
  4. Gently fold in the diced apples and walnuts or pecans until evenly distributed.
  5. Scoop the dough onto the prepared baking sheet, leaving space between each cookie.
  6. Bake for 12-15 minutes, until the edges are golden brown and centers are set but soft.
  7. Allow the cookies to cool on the baking sheet for about 5 minutes, then transfer to a wire rack to cool completely.

Notes

For a different flavor, experiment with various apple types. Serve warm with vanilla ice cream or powdered sugar on top.
