A rich and flavorful pie featuring a buttery crust filled with roasted pecans, dark chocolate, and a hint of bourbon.


Ingredients

  • 1 9-inch pie crust (homemade or store-bought)
  • 1 cup pecans (toasted)
  • 6 oz dark chocolate (60-70% cocoa, chopped)
  • 1/2 cup bourbon
  • 1/2 cup corn syrup
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1/4 cup unsalted butter (melted)
  • 1 tsp vanilla extract
  • Pinch of sea salt

Instructions

  1. Preheat the oven to 350°F (175°C) and place a baking sheet in the oven to catch spills.
  2. Roll out the pie crust and fit it into a 9-inch pie dish, crimping the edges.
  3. Toast the pecans on a baking sheet for 6-8 minutes, stirring once, until they smell nutty. Let them cool.
  4. In a medium bowl, whisk the eggs and sugars until smooth. Add melted butter, bourbon, vanilla, and sea salt. Stir in corn syrup and chopped chocolate to melt slightly.
  5. Scatter half the pecans over the partially baked crust or directly into the raw crust. Pour the filling over the pecans and top with remaining pecans.
  6. Bake the pie on the preheated baking sheet for 45-55 minutes, checking after 35 minutes and covering edges with foil if they brown too quickly. The center should jiggle slightly when tapped.
  7. Let it cool completely, then chill for at least two hours before serving.

Notes

Serve with whipped cream or vanilla ice cream. For a lighter touch, serve small wedges with a dollop of whipped cream and cocoa dust.
