- 1 9-inch pie crust (homemade or store-bought)
- 1 cup pecans (toasted)
- 6 oz dark chocolate (60-70% cocoa, chopped)
- 1/2 cup bourbon
- 1/2 cup corn syrup
- 1/2 cup brown sugar
- 2 large eggs
- 1/4 cup unsalted butter (melted)
- 1 tsp vanilla extract
- Pinch of sea salt
Instructions
- Preheat the oven to 350°F (175°C) and place a baking sheet in the oven to catch spills.
- Roll out the pie crust and fit it into a 9-inch pie dish, crimping the edges.
- Toast the pecans on a baking sheet for 6-8 minutes, stirring once, until they smell nutty. Let them cool.
- In a medium bowl, whisk the eggs and sugars until smooth. Add melted butter, bourbon, vanilla, and sea salt. Stir in corn syrup and chopped chocolate to melt slightly.
- Scatter half the pecans over the partially baked crust or directly into the raw crust. Pour the filling over the pecans and top with remaining pecans.
- Bake the pie on the preheated baking sheet for 45-55 minutes, checking after 35 minutes and covering edges with foil if they brown too quickly. The center should jiggle slightly when tapped.
- Let it cool completely, then chill for at least two hours before serving.
Notes
Serve with whipped cream or vanilla ice cream. For a lighter touch, serve small wedges with a dollop of whipped cream and cocoa dust.
