Ingredients

- 2 cups cooked and shredded chicken
- 8 corn tortillas (or flour if preferred)
- 1 cup shredded cheese (Monterey Jack or cheddar)
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp garlic powder
- Salt to taste
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- Olive oil for sautéing and brushing
Instructions
- In a skillet, sauté diced onions and bell peppers in olive oil until soft.
- Add shredded chicken, cumin, chili powder, garlic powder, and salt to taste. Cook until heated through, sprinkling in some cheese just before removing from heat.
- Warm tortillas slightly, spoon filling onto each tortilla, roll tightly and place seam-side down on a baking sheet lined with parchment paper.
- Brush the tops with olive oil and bake at 425°F (220°C) for 20-25 minutes or until golden brown.
- Let cool for a few minutes before serving with guacamole, sour cream, or salsa.
Notes
Avoid overstuffing the taquitos to prevent bursting. Store leftovers in an airtight container for up to 3 days or freeze for later use.
