Crunchy Oven-Baked Chicken Taquitos

Description

Delicious and crunchy taquitos filled with seasoned chicken, cheese, and spices, perfect for family gatherings.


Ingredients

  • 2 cups cooked and shredded chicken
  • 8 corn tortillas (or flour if preferred)
  • 1 cup shredded cheese (Monterey Jack or cheddar)
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • Salt to taste
  • 1/2 cup diced onions
  • 1/2 cup diced bell peppers
  • Olive oil for sautéing and brushing

Instructions

  1. In a skillet, sauté diced onions and bell peppers in olive oil until soft.
  2. Add shredded chicken, cumin, chili powder, garlic powder, and salt to taste. Cook until heated through, sprinkling in some cheese just before removing from heat.
  3. Warm tortillas slightly, spoon filling onto each tortilla, roll tightly and place seam-side down on a baking sheet lined with parchment paper.
  4. Brush the tops with olive oil and bake at 425°F (220°C) for 20-25 minutes or until golden brown.
  5. Let cool for a few minutes before serving with guacamole, sour cream, or salsa.

Notes

Avoid overstuffing the taquitos to prevent bursting. Store leftovers in an airtight container for up to 3 days or freeze for later use.
